Biryani is a rice based dish that carries meat or vegetables as the main ingredient. Lots of herbs and spices go into preparing Biryani and the meat and veggies are layered and baked. Biryani in Persian pertains to cooking and roasting and the word Biryani comes from the same.
Biryani originated from Persia and the legend states that that the nomads and tribals carried a lot of rice and meat on their extended journeys and they started the culture of layering meat and rice and cooking them as one after smattering ample nuts and dry herbs. The conventional approach consisted of simmering and cooking the mix under fire and then burying it under sand for a long time before the dish was deemed ready. The traditional form of Biryani has since then been improvised and modernized according to convenience
Nowadays there are plenty of styles of Biryani prepared using so many diverse cooking styles. There are probably more than a hundred varieties of Biryani prepared using various combinations of meat and vegetables.
Biryani has meat and rice as its central elements. The rest of the ingredients, differ depending on the type and style of the Biryani being cooked.
Hyderabad in India is considered as the Biryani capital of the world. There are mind boggling varieties of Biryanis cooked here at various diners. Some of those recipes are intimately protected by families and restaurants, as they have been handed down through numerous generations. The Mughals brought Biryani with them when they invaded India. It is one of the many influences that came to India with the Mughals and became particularly famous here and with time have further evolved. It also took on some local flavors to suit the spice loving Indians.
A great Biryani consists of perfectly cooked meat and the right blend of spices and herbs, baked along with rice. The meat and rice is not combined while cooking. They’re both cooked independently. The final stage of the preparation consists of layering the two alternatively and usually cooked either in an oven or on conventional wood fire, using low heat.
